Crock Pot Scalloped Taters ~ A Recipe

Okay, it was a hit so I will share, with the disclaimer that in my opinion you just can't beat scalloped potatoes from the oven, but in my quest to find more 'toss n' leave it' meals, this side dish is pretty spankin' good!

Crock Pot Scalloped Potatoes
10 pounds potatoes, peeled and sliced
1 large onion, diced
16 slices thick cut bacon, uncooked and diced
4 cups shredded taco blend cheese
1 28 oz can cream of chicken soup
~Place half of the sliced potatoes in the bottom of crock.
~Top with half  of onion, cheese and bacon.
~Repeat layers.
~Top with cream of chicken soup.
~Cook on low of 8 to 10 hours.
Easy peezy!!!!
Be a hero!!!

Oh my WORD!! A couple things:

1. Your crock pot will hold 10 pounds of potatoes???

2. There's NO way my HDHD will allow me to peel 10 pounds of potatoes.

That's all.

Everything else about this is amazing.

The End.

looks like a winner! My boys would love this recipe, but then it has bacon in it which is always a winner.

could you switch the cream of chicken to cream of mushroom?

Is 10 pounds correct? Sounds like a lot!

I really did use 10 lbs of potatoes. That's what it takes for my family. You certainly can half the recipe.

Does the bacon come out mushy or crisp?

This recipe was a big hit! I'm going to try it again, but use the oven. I decided too late in the day to have it for a side dish to use the crock pot version. I'll post the results.

Can you leave the skin on.. I love the skin of the potatoes

It would have been nice to see answers to the questions asked.

Crystal, yes, you could absolutely switch the cream of chicken for cream of mushroom soup!

Connie J said...

Bernadette, yes, 10 pounds is a lot, but that's what my crock will hold, and that's what my family will eat :) Feel free to one-half the recipe.

Stormy, the bacon is not crisp. I haven't tried this, but it might be a little crisper if you pre-cook the bacon.

Connie J said...

Jessica, I can't tell you the capacity of my crockpot, but it's a large oval CrockPot brand.

Connie J said...

Peace Love and Prozac, mine aren't sliced super thin, but the thinner you slice them, the less time it will take to cook.

Sultrypickle, thank you!!!

Connie J said...

Kellie, 10 pounds of potatoes will serve a LOT...like 20 people.

Connie J said...

Railey, if you are present to watch the crock, you can cook on high; otherwise, I'm afraid it would scorch.

Connie J said...

Jeannie, YES, you can leave the skin on! I love that too!

Wondering if you need to stir these at all during the 8 hours or if you just layer it put the lid on and forget it for 8 to 10 hours?

Connie J said...

Hi, Alicia! You can absolutely stir it during cooking.

Unknown said...

Lol I thought the same thing about the potatoes!!!! I am gonna try 10 and pray that's what she meant and change the soup to sour cream or cheddar cheese soup!
