Fun Times (and a recipe)

Tuesday was organizing day. Not very interesting pictures, but they will remind me that some of my closets were organized, if only for a week. Why does it bug me so much when the closets are a mess and why am I so relieved when they are clean?!?

Book and linen closet (good grief!) Every night we take two books out for bedtime, and obviously we just toss them back in when we're done.

It's so hard to find simple recipes that my whole crowd really likes, but this was a hit. It's Kraft Smarter Fettuccine. I've tweaked the recipe below.
Somebody either put his shoes on or take them off :)
I buy the large bags of boneless, skinless chicken breasts and bake them with garlic powder and pepper, then cut up and put in meal-size freezer bags so I can just take them out of the freezer when I want to make a chicken dish. So, that's my chicken for this recipe.
Smarter Fettuccine Alfredo with Chicken
serves 8
1 package fettuccine noodles
1 lb. or more cooked, cut up chicken breast
2 1/2 cups chicken broth
8 tsp flour
1 brick cream cheese
6 tbsp grated Parmesan cheese
salt and pepper to taste
Cook pasta according to package directions. Meanwhile, mix broth and flour in nonstick skillet. Stir in cream cheese, 3 Tbsp of Parmesan cheese and pepper. Stir constantly and cook until mixture boils and thickens, then stir in chicken. Drain pasta, cover with chicken mixture and top with remaining Parmesan cheese.

Your little guy is too cute. I too am adopted from China. I am 13 years old now. I was adopted when I was 6 months old.

I hope you get to bring him home soon.
Your family is big like mine. We are 6 kids..all from China..and Mom and we are 8.

Keep smiling..I know the waiting is hard.
