Okay, it was a hit so I will share, with the disclaimer that in my opinion you just can't beat scalloped potatoes from the oven, but in my quest to find more 'toss n' leave it' meals, this side dish is pretty spankin' good!
Crock Pot Scalloped Potatoes
10 pounds potatoes, peeled and sliced
1 large onion, diced
16 slices thick cut bacon, uncooked and diced
4 cups shredded taco blend cheese
1 28 oz can cream of chicken soup
~Place half of the sliced potatoes in the bottom of crock.
~Top with half of onion, cheese and bacon.
~Repeat layers.
~Top with cream of chicken soup.
~Cook on low of 8 to 10 hours.
Easy peezy!!!!

2. There's NO way my HDHD will allow me to peel 10 pounds of potatoes.

I really did use 10 lbs of potatoes. That's what it takes for my family. You certainly can half the recipe.

This recipe was a big hit! I'm going to try it again, but use the oven. I decided too late in the day to have it for a side dish to use the crock pot version. I'll post the results.

Crystal, yes, you could absolutely switch the cream of chicken for cream of mushroom soup!
Bernadette, yes, 10 pounds is a lot, but that's what my crock will hold, and that's what my family will eat :) Feel free to one-half the recipe.
Stormy, the bacon is not crisp. I haven't tried this, but it might be a little crisper if you pre-cook the bacon.
Jessica, I can't tell you the capacity of my crockpot, but it's a large oval CrockPot brand.
Peace Love and Prozac, mine aren't sliced super thin, but the thinner you slice them, the less time it will take to cook.

Wondering if you need to stir these at all during the 8 hours or if you just layer it put the lid on and forget it for 8 to 10 hours?

Lol I thought the same thing about the potatoes!!!! I am gonna try 10 and pray that's what she meant and change the soup to sour cream or cheddar cheese soup!
