Yes, We Have No Bananas

We eat a LOT of bananas.  And then sometimes we just don't get them eaten in that short window of perfection.
Since I found this recipe, I refuse to throw them away!
I like a banana nut bread that is melt-in-your-mouth moist...but isn't soupy in the middle.  Hard.to.find.
Until this one.
It's got a golden crust and is super moist.
Last night after supper I whipped up a batch, and it took 65 minutes, from deciding to eating it...and burning my tongue.
It's.that.good.



Super Moist Banana Bread
(Recipe)
1 cup oleo
2 cups sugar
4 eggs
5 large bananas, mashed
1 small box instant banana pudding mix
2 tsp baking soda
1 tsp salt
2 cups all purpose flour
1 cup chopped nuts
Cream oleo and sugar.  Add eggs and beat well.  Add pudding (dry), then bananas.  Sift together dry ingredients and add to mixture.
Grease 2 large loaf pans and dust with sugar.
Bake at 350 for 40-60 minutes, till center is done.  Remove from pan and cool on wire racks.

  1. Looks yummy! We freeze our bananas that we don't get eaten in time. They are perfect for banana bread and banana cake!

  2. We love banana bread at our house too, we have a great recipe we love but I might try yours out as well just to see. Sounds yummy! We also free our bananas when they start to get too ripe to use in bread later if I don't have time to make it right then and it works great!

    Sarah Risley here. You did a post a while back about making your own laundry detergent. Do you know if it's okay to use with HE (high efficiency) machines?

  4. Sounds delicious.

    Ummm . . . I bake ALL the time, and I have no idea what "oleo" is. Some type of butter, margarine, or shortening, I'd guess. Please tell.

    Note to Sarah (above): We make our own liquid laundry soap and use it in our HE machine. You can do a search on my blog for the recipe we use. :)
